I have made many chia seed puddings before… a choc chia seed pudding, a berry chia seed pudding/porridge and a superfood chia seed pudding. I even have a super tasty vanilla chia seed pudding in my (currently unavailable) eGuide Your Nutritious & Delicious Life, but NEVER have I created a caramel chia seed pudding – until today my friend!
This pudding makes enough for two and only takes 5 minutes in a high speed blender (I used my trusty Froothie)!
What you need:
2 tablespoons mesquite powder
2 cups almond milk
1/4 cup The Chia Co. chia seeds
3 tablespoons maple syrup
4 teaspoons lucuma powder
1/2 teaspoon vanilla powder
Optional garnish: dried white mulberries
How to make:
Place all ingredients into a high speed blender and blend until super smooth. Pour even amounts into two bowls (or you can get fancy and use martini glasses like I did), garnish with mulberries if using, and place into the fridge overnight to set. Enjoy the next morning for breakfast or as a tasty dessert!
